Summer is harvest time. It is during this period that preparations for the winter begin. What to do with tomatoes if there are already enough pickles, but there are still vegetables left?
Caviar
An unusual and tasty appetizer that is in no way inferior to squash caviar.
For preparation you will need:
- green tomatoes - 3 kg;
- beets and carrots – 3 kg;
- onion 1 kg;
- oil 0.5 l;
- salt;
- pepper;
- sugar;
- vinegar;
- garlic.
Vegetables are passed through a meat grinder. Next, butter, spices and sugar are added, the whole mass is mixed and cooked. After boiling, you need to cook over low heat for an hour and a half, stirring. Add garlic and vinegar 5 minutes before the end of cooking.
This snack can be left for the winter or eaten with bread after cooking.
Sun-dried tomatoes
Sun-dried tomatoes can be used in a variety of dishes and can also be added to their plumpness when stored in olive oil, which opens up additional culinary uses. Can be dried in the sun or in the oven.
The main thing to remember is to use the same size tomatoes in the same batch so that they dry at more or less the same speed.
The chopped tomatoes go into the oven for 3-4 hours. Along with sea salt, you can sprinkle any dried herbs or dry spices on the tomatoes to add flavor.
Tomato shish kebab
A delicious appetizer for any occasion that doesn't require any special expenses. Ingredients for cooking:
- medium-sized tomatoes - 6 pieces;
- olive oil;
- basil;
- spices.
Preparation: wash the tomatoes and remove the stem without damaging the skin of the fruit. Next, cut them in half or leave them whole. Sprinkle with oil and sprinkle with spices. Marinate for 30 minutes, then thread onto skewers and place in the oven for 15 minutes.
Adjika
This is not a classic recipe, but that makes it no less tasty.
Ingredients:
- tomatoes – 200 gr;
- celery – 1 pc.;
- garlic;
- greenery;
- vegetable oil;
- salt;
- sugar.
Wash the vegetables. Cut the celery into small pieces, do the same with the garlic and herbs. Remove the stems from the tomatoes and cut them into cubes. Load everything into a blender and blend. Add butter, salt and sugar.
The bright-tasting snack is suitable for consumption all year round, but if desired, it can be placed in a jar and left for the winter.
Tomato juice
A refreshing drink made from ripe tomatoes is tasty and quick. Ingredients for 1 liter of juice:
- ripe tomatoes - 1.5 kg;
- salt (to taste).
We remove the stems from the washed vegetables, cut them and put them in a juicer or meat grinder. Heat the mixture to a boil and wipe the seeds and skins through a colander. Boil the resulting juice for another 10-15 minutes.
Sauce
For tomato sauce you will need:
- tomatoes - 5 pieces;
- onion - 1/4 large head;
- garlic;
- salt;
- sugar;
- olive oil – 2-3 tbsp. spoons.
Preparation: Chop the onion and garlic. Peel the tomatoes and remove the seeds. Chop the pulp. Lightly fry the garlic and onion in olive oil, add the tomatoes and cook for 15 minutes.Add salt and sugar and cook for another 5 minutes.
The prepared sauce can be used for pasta or in addition to meat.
Tomato soup
Gazpacho is a cold tomato soup that is considered a classic of Spanish cuisine. Great for the summer heat. Ingredients:
- tomatoes – 600 gr;
- bell pepper – 2 pcs.;
- cucumbers –200 g;
- onions – 100 g;
- garlic;
- white bread – 2 slices;
- chili pepper (without seeds);
- wine vinegar – 50 ml;
- vegetable oil – 50 ml;
- salt;
- greenery.
Preparation: dry the bread in the oven. We cut the tomatoes crosswise and cook for 1 minute. Then we remove the skin. Bake the pepper in the oven for 10 minutes at 200 degrees, peel and remove the seeds.
Grate the garlic, grate the bread and add salt. Pour in vegetable oil and let the mixture brew. Cut the onion into small cubes and season with vinegar.
Cut the tomatoes into slices, peel the cucumbers and grate them. Finely chop hot peppers and herbs. Grind tomatoes and bell peppers in a blender.
Then add hot peppers, herbs and cucumbers. Put onion and vinegar there. Don't forget about the crushed bread. Stir and place in the refrigerator until cool.
You can prepare many different dishes from fresh tomatoes, in addition to pickles. Some are suitable for winter, while others can be consumed all year round.
